The Long, cool and dry ripening period of 2021 allowed me to pick this fruit botrytis free, which allowed me to make a clean, fresh and acidic sauvignon blanc. The fruit is from the southern part of the Magpie Springs vineyard on a steep south westerly slope. The soils are clay and sand stone based with quartz and ironstone deposits giving the wine a richness and power that i really like.
The fruit is direct pressed into barrel and tank for fermentation and left on full lees for elevage. The components are then blended together right before bottling.
